Unlike most fruits, around 80–90% of an açaí berry is actually a large seed (pit). The edible portion is only a thin layer of dark purple flesh that surrounds the seed.

Instead, the berries are soaked to soften the outer layer before specialized equipment gently separates the pulp from the seed. This process creates what we know as açaí pulp, the pure edible part of the fruit.
Since fresh açaí naturally begins to lose quality within hours after harvest, the pulp is frozen immediately after processing to preserve its taste, colour, and nutritional value.
